no, not at all. it was the cocoa.

today, we use "dutched", or alkalized cocoa: it's been given something to counteract acid's effects on it -- which is to say, breaking it down into something brilliantly, gorgeously RED.

originally, chocolate cake... was simply RED. because of the acidic ingredients that'd interact with the leavening agents.

it was only when cocoa commonly became alkalized that chocolate cake was brown, like chocolate itself. that's when people started messing with recipes to recreate the red look because they apparently didn't remember what caused it in the first place. (LOL)

the old recipes still exist, though -- and it's now possible again to get cocoa powder that isn't dutched, if you're curious to try that. but it's just chocolate cake.... that's ruby red on its own, no food coloring needed!

I'd have to poke my dad for where he keeps his version of the recipe, but after a quick google, this one should work well, I think?

INGREDIENTS
1 1/4 cup brown sugar
3/4 cup oats
1/2 cup sugar
3/4 cup milk
3 eggs, beaten
3 TBS unsalted butter, softened
1 1/2 tsp vanilla
1/4 tsp salt
1 unbaked pie shell

INSTRUCTIONS
Preheat the oven to 350°.
Mix the dry ingredients. Stir.
Add in the wet ingredients. Stir.
Add salt.
Pour into unbaked pie shell.
Bake for 45-50 minutes.

Grandma Albrecht's Oatmeal Pie

8" pie
3 eggs
2/3 cup sugar
1 cup brown sugar
2/3 cup oatmeal
2/3 cup coconut
2 tbsp margarine
1/2 cup of milk
1 tsp vanilla
1/2 tsp salt

mix pour into unbaked pie shell Bake at 375 degrees for 35-45 minutes, until center rises
