Well, I did once have kimchi flavored ramen, it was awful, but it was also just... cheap ramen.
and real sour barrel made authentic (did i say real) pickles.
means soured or fermented ones. I have to google the right term.

what are pickling spices though
generally a blend of spices including some or all of the following--
cinnamon, mustard seed, bay leaves, allspice, dill seed, cloves, ginger, peppercorns, coriander, juniper berries, mace, and cardamom.
with crushed red pepper flakes added if you want spicy pickles.
these are usually wrapped up in cheesecloth and used like a bouquet garni.
