it's kind of pathetic that THE yuri couple back then
ended on such a depressing note in the anime...
yeah, back then they were all "omg can't offend the watchers with TEH GHEY actually working out omg"

that being said, I don't think it was a matter of "offending" anyone so much as it's the Japanese love of tragic endings.
this goes for any kind of romance genre
Yuri had all those terribad endings because it was seen as a part of class S, which meant you could have something like that in school
and all, but you better grow out of it, and marry a guy, like a proper woman should.
And considering how incredibly hostile the japanese audience has shown to be towards "two women living together as adults"...
Example, Wife and Wife got a TON of hate on 2chan. It's...a small, harmless manga doing nothing bad or special.
but the target audience also finds that sort of stigma to be entertaining

The yuri anthologies are all very recent too. It's quite funny, a few years ago there wasn't any, and now there's four
(okay, its nothing compared to the 20+ yaoi ones, but ...4's a start right? :/ )

yeah, one of the yuri hime authors actually said in an interview that she loved doing yuri (she also did yaoi)
because she didn't have to add bad endings

...Tho there is that ghost one whihc had a pretty crappy ending. Kiss -> vanish the ghost.

that's one of the reasons why I like NanoFate so much
it doesn't really follow those rules
most of the time yuri couples consist of the awesome cool ~oneesama~ and a timid adorable everygirl
at least, the major ones really come off like that

then there are series like Maria-sama ga Miteru that point out just what's wrong with this formula

Japan appreciates conformity
Mainstream Japan sure does
even subcultures of Japan can be like that, though
they have a lot of rules on just how you're meant to portray yourself
so while they go against the grain of the mainstream, they themselves have very rigid rules on conformity
and if you don't follow them, you're ostracized
thats why I follow only a few subgenres that at least try to have some creativity and nonconformity, ahaha.
