Try holding the home button and power button until the Apple logo appears to do a hard reboot. And there is no trash like a Mac.

You'd have to go to the deleted items folder for that mailbox and delete the offending message.

Alk i can figure out is how to delete individual messages in the trash folder, but she has 200+ emails in there and i can't find an

Ok, found it. Why would you need to hit "edit" to delete all... No wonder my mom couldn't figure it out. So user friendly!
