what's your favorite pot roast recipe? I've made brisket and countless beef stews, but mom has a massive beef shoulder in the fridge and I've never cooked something so large before.

I also like Jeff Mauro's pot roast Italian beef. it's spicy. and add veggies.

lastly Giada has one with cippolino (sp) onions and fennel which was good

I usually plop meat into crock pot or a large baking dish with onions, garlic, turnips, parsnips, carrots and celery with some marjoram. Near the end of cooking I add whole mushrooms.

Just_Is: It'll work in a dutch oven too. I've just done it in an oven. usually because the meat is too big for a crock pot.

I've made dozens of briskets but never a pot roast. dunno what I was worried about; same concept, different size and cut of meat.

we took it out a little before every thing else was done
and I made kick ass gravy from the braising liquid
in my family I'm the gravy master
