garlic parmesan cauliflower mashed potatoes are DELICIOUS
justification for this dish: I'm tired of roasted cauli but I still had a whole head of it, and my potatoes were about to sprout
so, as usual, a clean-the-pantry dish
because a bunch of food about to go bad is the only thing that will motivate me to cook like an adult
Recipe: -2 potatoes -1 head of cauliflower -4 cloves roasted garlic -3 tbsp butter -1/4 cup heavy cream -salt, pepper, chives to taste -some parmesan cheese, idk how much, follow ur heart
garlic roasted in the oven, cauli steamed, potatoes boiled
cauli, cheese and garlic in the food processor
potatoes, milk and butter mashed with a mixer because I'm a lazy fuck and don't want to mash by hand
cauli is not super noticeable and adds great texture the potatoes - keeps them from getting stiff and clumpy as they cool
10/10 for taste, 6/10 for prep & cleanup difficulty
I had to clean TWO pots, which is usually a disqualifier, and the food processor, mixing bowl and mixer paddles
fortunately all that can be stuck in the dishwasher if I feel so inclined
