oh man, I love onions! ...but almost never raw. gimme onion rings instead of french fries! gimme onion bits baked onto pizza! gimme onions caramelized for my burger, or cooked into a sweet soup, or as a seasoning in the spaghetti sauce....
onions have a ton of sugar - but it only seems to come out when heated just right.
and then vidalia sweet onions manage to lack that more astringent flavor that onions are generally known for. those are an absolute treat to cook with!
